Zucchini Yellow Squash Black Eye Pea Sweet Potatoes Soup
 Equally tasty whether served hot or cold.

- 3 tsp  of Vegetable Oil
- 1/2 Cut Zucchini
- 1/2 Cut Yellow Squash
- 1 and 1/2 Cut Sweet Potatoes
- 1/2 Cup of Cubes Cut Onions
- Organic Dried Black Eye Peas
- 1 Small Can of Tomato Juice
- 2 Cloves of Garlic
- Heat olive oil in a large skillet over medium heat. Stir in onion and garlic; cook until onion is soft and translucent. 
- Mix in water, vegetable broth, tomatoes, black-eyed peas, sweet potatoes, and chopped bell pepper.  
- Bring contents to a boil. Reduce heat to medium-low; simmer, covered, until sweet potatoes begin to disintegrate, about 20 minutes. Season with salt and cracked pepper to taste. Stir in fresh parsley, and serve.
