Zucchini Yellow Squash Black Eye Pea Sweet Potatoes Soup

 Equally tasty whether served hot or cold.

Ingredients
  

  • 3 tsp of Vegetable Oil
  • 1/2 Cut Zucchini
  • 1/2 Cut Yellow Squash
  • 1 and 1/2 Cut Sweet Potatoes
  • 1/2 Cup of Cubes Cut Onions
  • Organic Dried Black Eye Peas
  • 1 Small Can of Tomato Juice
  • 2 Cloves of Garlic

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Stir in onion and garlic; cook until onion is soft and translucent.
  • Mix in water, vegetable broth, tomatoes, black-eyed peas, sweet potatoes, and chopped bell pepper. 
  • Bring contents to a boil. Reduce heat to medium-low; simmer, covered, until sweet potatoes begin to disintegrate, about 20 minutes. Season with salt and cracked pepper to taste. Stir in fresh parsley, and serve.
